Indeed, the protease activity of Aspergillus oryzae targets the proline-rich 33-mer of gliadin, perhaps the most immunotoxic peptide derived from gliadin. The proline-rich antigenic and immunomodulatory proteins found in gluten are thought to trigger an inflammatory response in patients with celiac disease or gluten sensitivity, often due to accidental gluten exposure, even in individuals on a gluten-free diet. Aspergillus oryzae protease supplementation has also been associated with a bifidogenic effect in animals, suggesting a potential probiotic effect, as well as an increase in gut-protective amino acids.
