Aged black garlic (ABG) is produced by fermenting fresh garlic (Allium sativum) bulbs under controlled high temperature and humidity, resulting in darkened cloves rich in water-soluble antioxidants. Compared with raw garlic, ABG exhibits increased levels of S‑allylcysteine (SAC), melanoidins, and phenolic compounds, with reduced pungency and improved tolerability.
